It's a HAPPY NEW YEAR'S EVE!

Hey, it's MAUVE again! Hahaha, bet you guys are tired of looking at my posts. I've has been obsessed with K-pop stuffs. [As clearly seen from the previous blog posts of videos]

So what do we have today?

It's the very last day of 2011 and a whole new beginning of 2012 commences tomorrow! Time flies and oops, I'm is getting older. Alright, this is not my main point. Indeed, this year has been a rather quick and of course stressful year for me.

So, I'm going to write a pretty long (perhaps whiney post) but please do bear with me.

First of all, I would like to share with you guys my "SECRET RECIPE". Don't get me wrong, it's just my baking recipe.

1. Honey Flakes.
Adapted from kellogg.com.au (June-July 2011)
90g butter
1/3 cup sugar (mauve prefers demerera sugar)
1 tablespoon honey
4 cups corn flakes

To cook:
Preheat the oven to 150 degrees C.
Line 24 hole patty pan with paper cases.
Melt butter, sugar and honey together in a saucepan until frothy.
Add Cornflakes and mix well.
Spoon into paper patty cases.
Bake in slow oven 150 degrees C for 10 min.

2. Chocolate Ganache.
Adapted from  joyofbaking.com (November 2011)

230g semi-sweet/ bitter-sweet chocolate; finely chopped.
3/4 cups (180ml) double cream
2 tablespoon of 28g butter (unsalted)
1 tablespoon brandy (You can substitute it for vanilla extract/others)

To cook:
Melt butter and chocolate.
Pour heavy cream over chocolate.

3. Chocolate Cake.
Adapted from allrecipe.com (November 2011)
Serves 12, 9 inch round pans

2 cups boiling water

1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 teaspoons vanilla extract

To cook:

-Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
-In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
-Bake in preheated oven for 25 to 30 minutes. Allow to cool.


4. Haemul Pajeon 해물파전 (Korea Seafood Pancake)
Adapted from messywitchen.com (June- July 2011)
Makes 8-12 pieces depending on size.
180g flour

350ml water
1 egg
or alternatively use Korean pancake mix.
2 mussels, chopped
1 squid, chopped
3 crab sticks,
50g shrimps, shelled and chopped
1 teaspoon minced garlic
30g spring onions, chopped
salt and pepper to taste
sauce
125ml light soy sauce
1 tablespoon minced garlic
1 tablespoon finely chopped onion
1 red chili, finely chopped
1 tablespoon finely chopped carrot
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon sugar
1/2 tablespoon chili powder
1 stalk spring onion, chopped
water to taste or 1/2 can 7-UP
Method:
To prepare pancakes:
1. In a large bowl, mix flour, water and egg to a smooth batter.
If necessary, add a little more flour or water to get the consistency of a thin pancake batter.
2. Add garlic, mussel, squid, crab sticks, shrimp and half the spring onions.
3. Season with salt and pepper and stir well.
4. Heat a pan over medium heat and pour a little oil in.
5. Spoon enough batter into the pan to make a thin pancake.
6. Sprinkle a little chopped spring onion over the pancake and allow to cook for 3-4 minutes until bottom is lightly browned.
7. Flip the pancake over and allow the other side to cook, pressing down lightly with a spatula to make sure the surface is evenly browned.
8. When cooked on both sides, remove to a plate lined with a paper towel to soak up excess oil.
9. Repeat until batter is used up. [You can keep batter in fridge for next day]
To prepare sauce:
1. Mix all ingredients together, combining well.
